Glazed Root Vegetables

Sweet Baked Acorn Squash

This squash is so decadently buttery and sweet that it is difficult to believe that it is not dessert. We owe our sweet neighbor our gratitude for supplying us fresh, organic acorn squash lovingly plucked from her garden. She has ignited a squash passion in our house and this dish has become a nightly delight.

Roasted Garlic Mashed Potatoes

Creamy, garlicy mashed potatoes. Delightful with golden onion gravy.

Winter Chard

A delicious, healthy side dish.

Rosemary Fingerling Potatoes

Always looking for a way to make use of our overgrown rosemary bush! These potatoes are extremely easy to make and so flavorful.

Lemon Basil Herbed Rice

Quick Collard Greens

Here’s a way to prepare collard greens that cuts the cooking time down to a fraction of the long simmer typically associated with these tough leaves. In this case, the leaves are cut into very thin strips, which breaks the fibers and helps the greens wilt. The seasonings are lighter, too, with pork fatback, salt pork, or ham hocks being replaced with olive oil, chile flakes, and garlic.

3-Bean Steam

Burdock & Carrot Kinpira

Kinpira refers to a Japanese cooking style of braising vegetables, typically root vegetables, and often a combination of carrot and burdock. Burdock is a tenacious root that’s especially good for your liver and blood. It’s often available in farmers’ markets in the fall.

Mother in Law Lentils

A super-easy, inexpensive and nutritious way to celebrate the humble lentil. My mother in law used to make these for my husband when he was a child, hence the name.
