Rosemary Fingerling Potatoes

Always looking for a way to make use of our overgrown rosemary bush! These potatoes are extremely easy to make and so flavorful.
Preparation Time:
15 minutes
Servings:
Serves 4
Ingredients:
1 pound fingerling potatoes (I like the purple french variety)
2 tablespoon olive oil
1 tablespoon rosemary, chopped
Salt and pepper to taste
Preparation:
1. Wash and slice potatoes
2. Heat pan on medium high with olive oil
3. Sauté potatoes in pan for 12 to 15 minutes, flipping potatoes from time to time
4. Add rosemary, salt and pepper
5. Sauté for a couple more minutes (until potatoes are golden and you can smell the aroma of the rosemary)
