Vegan Chocolate Chip Cookies

The classic chocolate chip cookie, gone vegan!

Preparation Time: 
30 minutes
Servings: 
20-24 cookies
Ingredients: 

2 cups flour, I used King Arthur unbleached white whole wheat flour
1 cup turbinado sugar, I used Hain, ground fine
2 tablespoons egg replacer powder, I used enerG
1 tsp. baking soda
½ cup water
¼ cup sunflower oil
1 tsp vanilla
½ tsp salt
1 cup vegan choc chips, or carob chips if you prefer, I used grain sweetened by Sunspire
½ cup chopped nuts, I used walnuts

Preparation: 

Preheat oven to 350 degrees.

1. In large bowl, combine flour, sugar, egg replacer, baking soda, and salt.

2. In small bowl, combine water, oil, and vanilla, and mix well.

3. Pour wet mixture into dry, and mix just until soft dough forms.

4. Stir in chips and nuts.

5. Drop by spoonfuls onto parchment lined cookie sheets.

6. Bake at 350 degrees about 10-12 minutes, depending on size.

7. Transfer to racks to cool.

Awesome with a cold glass of your favorite nut milk!
